Went to a discount grocery store last weekend and changed my mind about meal prep
I always thought meal prep meant eating the same thing for 5 days straight. Then I walked into Grocery Outlet in Portland and saw they had bags of frozen chicken thighs for $3 each and big bags of rice for $2. I grabbed 4 bags of chicken and 2 bags of rice and made 8 different meals in one afternoon using different sauces from the dollar aisle. Now I'm actually saving money and not bored out of my mind. Has anyone else found a good hack for mixing up prepped meals without spending extra?

Man, I felt that in my bones. I used to dread Sunday because it meant eating the same dry chicken and broccoli till Thursday. Your Grocery Outlet find sounds like a game changer, seriously jealous of those chicken thigh prices.

@josephbutler Did I type this myself and forget? Sounds exactly like my old Sunday dinners.

Henderson, that Sunday chicken rotation hits close to home, but I gotta give @henrycooper some credit here. Thursday leftovers of dry broccoli are a solid reminder why we all upgraded to thighs. That extra fat keeps it from tasting like cardboard by day three.
