Shoutout to the lady at the farmers market who gave me her lentil soup recipe

I was complaining about my grocery bill to this older woman while waiting for eggs, and she just smiled and told me lentils are 99 cents a pound if you buy them bulk. She said to simmer them with a onion and a bay leaf for 20 minutes and that's it. Has anyone else found a cheap recipe that actually tastes like comfort food?

I saw this thing online about how the cheapest meals are always the ones that have been around forever, like lentil soup or beans and rice. That bay leaf trick is real, it adds a depth that makes it taste like you simmered it all day. My grandma used to make something similar but she'd throw in a carrot and a celery stalk too, cheap vegetables that last forever in the fridge. It's honestly wild how a few simple ingredients can make you feel all warm inside without breaking the bank.

Man that's exactly what I do with my lentil soup too, I'll buy a bag of carrots and a whole celery bunch for like three bucks and it lasts me two weeks of lunches. The bay leaf really is the secret weapon though, people don't believe me when I say it makes that big a difference...
