Roasted a whole chicken last week and the leftovers lasted 4 days

Spent $6.50 on a bird at Aldi on Tuesday and I'm still eating from it, made soup, sandwiches, and tacos. Anyone else find a whole chicken way more economical than buying parts?

That $6.50 bird from Aldi is seriously the gift that keeps on giving. Iris is right, we overthink things and forget how far a simple whole chicken can go. I roast mine on Sunday with just salt, pepper, and garlic powder, then pull all the meat off Monday night for sandwiches and salads. The carcass goes straight into a pot with some celery and onion scraps for stock, which becomes soup base on Tuesday or Wednesday. Thursday I'll shred the last bits of dark meat for tacos with some cheap corn tortillas and hot sauce. It's wild how one $6 chicken can give you four completely different dinners.
