Lentils used to be my enemy, then a $3 experiment flipped me
I always avoided lentils because my mom boiled them into grey mush when I was a kid. Last Saturday I tried a red lentil curry recipe from a coworker in Austin, she said to toast them in a dry pan first and add a spoon of butter at the end. Total cost for the whole pot was like $3.75 and it fed me for 4 lunches, plus I didn't even need rice to feel full. Has anyone else found a cheap staple they swore off for years that turned out great with the right prep?

Whoa, hold on there. I gotta push back on this whole lentil love fest. You toasting them and adding butter just makes them taste like butter, not good food. I tried that same trick a couple years ago, and I still ended up staring at a bowl of mush that looked exactly like what my grandma used to serve, just with fancier spices on top. Cheap is cheap, but if I have to do all that extra work to make a food edible, I'd rather just buy a rotisserie chicken for the week. Plus, the payoff is still lentils at the end of the day, and that's a hard pass for me.
