Hit $1.80 per meal last month, still can't believe it
I tracked every grocery receipt for 30 days straight in Austin and my average landed at $1.80 a meal using dry beans, bulk rice, and whatever veg was on clearance at the H-E-B. Anyone else ever crunched their actual numbers and got a figure that made them rethink their whole list?
My $2.10 a meal number came from a 6 week stretch in Portland where I did the same thing with a food co-op that had ugly produce bins. The trick that pushed me lower was buying a whole chicken when it went on sale for 99 cents a pound, roasting it, then using every scrap for broth. That broth became the base for lentil soup and rice dishes all week, so I got like 4 extra meals out of something I used to toss. My grocery list changed completely after that, I stopped reaching for pasta and started grabbing whatever grain was cheapest that week. Your H-E-B clearance rack is a goldmine, I miss that about Texas more than I thought I would. It takes some work upfront but once you get the rhythm down, it honestly feels like cheating.
