Found a $3 bag of lentils that changed my meal prep game
I was at WinCo last week and grabbed a 2-pound bag of brown lentils for like $3.50. I cooked up a big batch with some canned tomatoes and onions I had laying around, and it made 6 solid servings for lunches. It freezes really well too. Anyone else have a go-to cheap staple they rediscovered recently?

Lentils are a killer deal. I grabbed a bag of red lentils for $2.80 last month and have been doing the same thing with curry powder and coconut milk.

Throw in some smoked paprika too, it gives it a real depth. I've been adding a splash of apple cider vinegar right at the end, just a little bit, and it wakes the whole thing up. Also, if you let the lentils sit for like 10 minutes after you turn off the heat, they soak up all that extra liquid and get even creamier. Makes a massive difference for almost no effort, your mileage may vary though.
