Tried buttering my bricks with a notched trowel instead of a margin trowel

Switched to a 1/4 inch notched trowel for my face bricks on a shed last Saturday and the mortar actually stuck instead of sliding off, has anyone else messed with different trowel sizes for tricky spots?

My husband once tried using a cake icing spatula on our fireplace bricks, what a mess that was.

And then you have to get the icing sugar out of the brick grooves right? That stuff basically turns to cement when it gets hot. My cousin once tried cleaning her grill with a whisk, she said it was like trying to shampoo a cat. I mean the RESULT was sort of the same though, a big sticky disaster all over the place. At least cake icing smells better than burnt cheese.
