TIL the hard way not to trust a wet mortar mix on a windy day

I was laying a backyard wall in Phoenix last Saturday and the wind dried out my joints before I could even tool them, ended up chipping out about 15 feet worth. Anyone else run into trouble mixing for the weather and have a fix besides just waiting it out?

Misting the wall down first helps the mortar stick longer in dry heat.

Misting the wall down is smart, but last time I tried it I just ended up with a wet brick staring back at me like I insulted it.
