Shoutout to the guy who warned me about my firebox door seal

Last Thursday, I was smoking a brisket for a church potluck and my temps were all over the place... I couldn't keep it steady. A guy at the hardware store had mentioned checking the gasket on my Old Country Pecos, and sure enough, it was completely shot, letting in way too much air. Anyone else had a simple seal issue ruin a whole cook?

Honestly, that temp swing sounds like normal brisket problems to me. A bad seal is just an easy thing to blame when the fire management gets tricky. Plenty of people run smokers with worn out gaskets just fine.

That old gasket probably cost you more in brisket than a new one would.

Yeah, a busted seal on my WSM had me fighting the fire all night once.
