Rant: My brisket stall lasted 8 hours on a random Tuesday

I decided to try wrapping it in butcher paper at 150 degrees instead of my usual foil, thinking it would help the bark. The thing just sat there, barely climbing 10 degrees until 2 AM, and I learned patience isn't just a virtue, it's a requirement. What's the longest stall you've ever had to sweat through?

Eight hours is a special kind of torture.

Wait, have you ever worked a 12 hour shift? Eight hours feels like a vacation after that.

Honestly, eight hours for a brisket stall is just part of the deal. It's not that serious, it's just how meat cooks sometimes. The_robin has a point about real work shifts, this is just watching a grill. You chose to wrap at 150, so you kinda signed up for the wait. It's not torture, it's just a Tuesday.
