Ran into a pitmaster at a gas station in Memphis who gave me the best brisket advice I've ever gotten

He saw my smoker in the truck bed and said, 'If you're wrapping, use butcher paper at 175, not foil at 150.' I tried it that weekend and the bark was perfect. Anyone else have a random tip that actually worked?

Ever wonder if the best advice is always from experts? My neighbor, a retired plumber, told me to spritz my ribs with apple cider vinegar and cheap beer. It sounds nuts, but it made them way more tender than anything I read online.
