Pro tip: picked a cheap offset over a pellet smoker and my brisket finally got the bark I wanted
Last summer I was set on buying a pellet smoker because everyone online made them sound foolproof. A pitmaster at a comp in Waco told me pellets are great for sleep, not for bark. So I got a $300 offset instead and burned through 3 cooks before I could hold 250 steady. The 4th try got me a brisket with a crust my pellet friends keep asking about. Any of you run both and actually prefer the pellet for comps?
