Old pitmaster John told me my bark was too dry. He was right.
I spent 6 months chasing that perfect crust on brisket. Kept cranking up the heat on my offset smoker. John watched me pull one and said 'Son, your bark's cracking like a desert floor'. He told me to stop opening the firebox every 30 minutes to peek. Also said to spritz every 90 minutes with apple juice until the stall. Next brisket came out with bark that bent instead of broke. Has anyone else fixed bark problems by just leaving the smoker alone?

Did you try duct tape first?

Ugh, duct tape has saved me more times than I care to count. I had a cracked radiator hose once and wrapped it with duct tape and some zip ties as a temp fix to get me 20 miles home. It actually held up for three days until the new part arrived. Solidarity on the jerry-rigging life.
