What do you think makes the resting part so important? My first brisket was a total mess because I cut it right away, and @noah999 is right, it's a solid way to look at the whole process. That patience at the end is what separates okay BBQ from the good stuff, you know? Ever had a meal totally change because someone rushed that last step?

My buddy Dave served a pork shoulder straight off the grill last summer and all the juice just ran out onto the cutting board, it was so dry lol.
