I was trimming a brisket in my garage when I finally noticed my knife was the problem

My buddy from Austin pointed out I was using a 6-inch boning knife instead of a proper 12-inch slicer, which was tearing the meat. Anyone else make a simple tool mistake that messed up your results?

Honestly saw a video where a guy was talking about exactly this. He said a short blade just pushes the meat around instead of cutting it clean, especially on something big like a brisket. Tbh that flex in a boning knife is good for other jobs but it's a real problem for trimming. Makes total sense why you'd get a tear. Gotta have that long, stiff slicer to get a smooth pull through the fat.

That garage brisket trim sounds rough. What brand of boning knife were you using, and had you done it that way before without noticing the tear? I'm curious if it was the length or the blade flex that caused the real issue.

Just a cheap grocery store knife, honestly. Probably the blade flex, but my technique didn't help either.
