Heard a guy at the hardware store say he cooks his brisket at 400 degrees
I was grabbing some charcoal and this dude was telling his friend he runs his smoker at 400 the whole time for 'faster results'. I tried it once on a pork shoulder and it was like eating a shoe. Anyone ever actually had success with that high heat method?

Oh man, that hurts to hear... I feel for your pork shoulder, honestly. My neighbor tried to tell me the same thing about ribs once and they were just... tough and sad. It really does miss the whole point of low and slow, that gentle heat breaking everything down. Some shortcuts just aren't worth it.
