Had a cookout last Saturday where my brisket was a total disaster

I put a 14 pound packer on my offset at 6am and it was looking perfect until I hit the stall around 160. Then the wind picked up and my temp dropped from 250 to 180 in like 20 minutes. I tried to fix it by adding more wood but then it spiked to 300 and ruined the bark. The middle was dry and the flat was tough as leather. My uncle said 'at least the beans are good' which was a real burn. Has anyone else had their whole cook go wrong because of a sudden weather change?

Bro, same thing wrecked my first brisket last year. I dropped a welding blanket over the offset when the wind hit and it held the temp way steadier. You just gotta prep for the weather gods being trolls and have that thing ready to throw on quick.

That wind got you good... same thing happened to me last fall with a pork shoulder.
