DAE watch pitmasters on YouTube and wonder if they're really out there at 3am or just filming at noon
I got into a debate with a buddy last month about whether those overnight brisket videos are legit. He swears the guy in a popular channel just starts the fire at 6pm and films the sunrise shot the next morning after sleeping in a hotel. I decided to test it myself last Saturday, fired up my offset at 9pm with a 14 pound packer and stayed up the entire time. By 4am I was so tired I nearly dozed off and let the temp spike to 310 before I caught it. The brisket still came out decent after I wrapped it at 165, but it made me respect anyone who actually does the all night thing on camera. How do you all handle the overnight cooks, do you nap in shifts or just power through?
