Been smoking brisket for 6 years and still can't get a decent bark on an electric smoker

Moved to a new apartment last year with a strict no-charcoal rule so I had to switch to a Masterbuilt electric. I've tried everything - different rubs, no wrapping, spritzing hourly, leaving it in longer. My bark on my old offset was always dark and crunchy. Now it's just this soft brown skin that rubs off if you look at it wrong. I know electric smokers just don't get hot enough for good bark but has anyone figured out a workaround that actually works?

Spray it with a little water and crank it to 275 for the last hour or two.

That "soft brown skin" thing hits too close to home man, it's super frustrating when you know your old setup crushed it. Solidarity from another electric smoker sufferer lol.
