TIL that not sifting flour gave me my best cake yet
I was in a hurry and just dumped the flour into the mix without sifting. The cake rose perfectly and tasted amazing. Now my baking group acts like I'm some kind of rebel for skipping this step. I've made three cakes this way and they all turned out fine. Why do people make such a big deal out of sifting?

Honestly started weighing my flour instead of sifting it a few years back. The cakes and muffins come out exactly the same for me. That extra step just felt like a waste of time once I got consistent with the scale.

Find that with most tasks. Why keep doing extra work when the result is the same?

Back in my home kitchen, I tried weighing flour after watching a YouTube tutorial. It turned out my cakes were just as good without the sifting step. I remember thinking all that sifting was basically a fancy way to make a mess. Now I just dump and weigh, and everything bakes evenly. The only time I sift is if the recipe has lumps, which is almost never. Honestly, the scale saved me so much time and cleanup.
