That time my buttercream split right before a birthday cake order
Was making a big batch of Swiss meringue buttercream for a friend's kid's cake last Saturday. Got distracted by the fryer timer going off in the other room, came back to my mixer and the whole thing had curdled into a greasy mess. Tried to save it by warming it over a double boiler but it just got worse. Ended up starting over from scratch at 10 PM and the cake got delivered an hour late. Has anyone else had buttercream do this and actually fixed it without crying?

That time my buttercream split" sounds like life in general honestly. Everything's going smooth til you step away for one second and it all falls apart like a bad souffle.

Man, that exact thing happened to me last month with my sister in law's wedding cake. I thought I could fix it by tossing a warm towel around the bowl while it was still mixing and it just made everything worse. Ended up scraping that whole batch into the trash and starting fresh at 1130 on a Tuesday night. Worst part was I had to text her at midnight saying the cake would be ready at 8 AM instead of 6 AM like I promised. She was cool about it but I still feel the shame every time I see buttercream now.
