Sourdough starter math finally clicked after 14 days of feeding

I kept seeing vague ratios online but never understood why my starter doubled then collapsed every single time. Then I read King Arthur's guide that said 1:2:2 feeding at 78 degrees means the starter peaks around 6 hours, not whenever you remember to check it. I set a timer for once and actually caught the rise, my bread came out 40% taller than any loaf before. Has anyone else tracked their peak time and found it shifts way more than the recipes claim?
