Pro tip: I had to choose between using a metal pan or glass dish for my lemon bars

The recipe said to use a 9x13 metal pan, but I only had a glass dish of the same size. I went with the glass and baked it at 350 for 35 minutes like usual. BIG mistake, the bottom crust was totally soggy and undercooked. My friend who bakes a lot told me glass heats differently and I should have lowered the temp to 325. Next time I'm just buying the right pan. Anyone else have a fail because of the wrong bakeware?

My grandma's old handwritten pie recipe has a note in the margin about glass pans. It says for any fruit bottom, like a lemon bar, to always preheat the empty glass dish in the oven for 5 minutes before adding the crust. It helps start the cooking right away to fight sogginess. I tried it once in a pinch and it made a real difference.

Oh wow, that's a super specific tip from Terry's grandma. @bethperez, when you say glass is the worst, is it mostly because it heats up so slowly and leads to a soggy bottom every time? I've had that happen with my lemon bars before and it's so frustrating.
