Noticed everyone's baking macarons now, but mine always crack.

I see macarons popping up at every local bake sale. Tried making them again last week, and they still came out hollow. Is it just me, or are these treats trickier than they look?

Oh, macarons are absolutely holding a grudge against home bakers! I swear mine turn out differently every single time, just to keep me guessing. It's like the universe's way of saying not everything can be Pinterest perfect.

Those "Pinterest perfect" dreams are why macarons fight back, @lilykelly. Mine straight up refuse to grow feet half the time.

My last batch came out completely hollow even though the tops looked fine. I read somewhere that humidity can wreck them, so now I check the weather before I even try. Do you find your oven's actual temperature matches the dial?
