My sister said my bread was 'too pretty to be tasty' and she was right

I spent 3 years obsessing over scoring and oven spring, then one taste of a dense ugly loaf from a bakery in Portland showed me what I was missing. Anyone else get humbled by someone who thinks fancy equals flavorless?

Friend of mine spent two years perfecting sourdough. Got the crumb shot, the blistered crust, the whole thing. Brought a loaf to a potluck and some old lady took one bite, said "this is pretty but where's the tang?" and handed it back. He was crushed. Next week he made a flat, ugly batard with zero scoring and let it ferment way too long. That ugly thing was the best bread he ever made, all deep sour and chewy. Now he burns the crust on purpose and tells everyone it's "rustic." That Portland bakery ruined him too.
