My neighbor swore by adding mayo to cake batter for moisture. I tried it with a box mix last Sunday and the texture was actually perfect.
She told me it was an old wive's trick her grandma used. I was skeptical but those chocolate cupcakes came out super tender and not greasy at all. Anyone else ever try this weird ingredient swap?

Oh man, I don't know about that one. I heard about the mayo thing a few years back and it just sounds so wrong to me. Like, I get that mayo is basically oil and eggs which are already in cake, but my brain can't get past putting something that goes on a sandwich into a sweet dessert. I mean if it really works then more power to you, but I'll stick with my butter and oil the old fashioned way. It's a cake not a science experiment, you know?

You said it's 'not a science experiment' but honestly baking IS kind of chemistry though right? Like the whole point of box mix is that it's already a science experiment someone else ran for us. So if mayo adds moisture without making it greasy... isn't that just using the science? I'm genuinely curious - have you ever actually tried it or are you just going off how it sounds in your head? Because I was the same way until my cousin made me try her mayo cake and I was shocked how good it was.

Admit it, I tried the mayo trick once because I ran out of oil and was too lazy to walk to the store. The cake came out so moist I half expected it to apologize for being weird. I spent the whole time eating it trying not to think about the fact that I was basically eating a sandwich spread. My brain still does a double take every time I see a jar of mayo near a mixing bowl. But honestly, if it works, it works. I just can't look my Duke's straight in the label afterward.
