My grandma's sourdough starter was right all along - I'm a convert now

I ignored her 1960s starter for like 2 years thinking modern yeast packets were better until my bread kept coming out flat and dense. Finally used her starter last month and that first loaf had the perfect crust and airy crumb - has anyone else had an old family recipe change their baking game?

I used to think old starters were overhyped too but @lindaowens that rye recipe sounds unbelievable.

My 90-year-old neighbor gave me her mother's rye bread recipe from 1920s Hungary and it changed how I look at fermentation completely. That sour tang and chewy texture from a 4 day rise in the fridge is something no quick packet mix can touch.
