Heard my mom's friend say self-rising flour is a waste of money

Honestly your mom's friend is right if you bake a lot. Self-rising flour has the baking powder and salt already mixed in, so it's convenient for quick stuff like pancakes or biscuits. But the problem is you can't control the salt level, and it goes stale faster than regular flour. I just keep all-purpose flour and a box of baking powder on hand. That way I'm not stuck when a recipe calls for something else.

In most of the South, self-rising flour is also milled from softer wheat which gives lighter biscuits and cakes.
