The Saturday I sold 47 croissants by 9 AM and cried in the walk-in
Last weekend was the weirdest day I've had at the shop in Tulsa. I usually sell maybe 20 croissants all morning, but this Saturday we had 47 gone before 9 AM. A church group from Broken Arrow came in and cleaned us out, then a wedding planner bought the rest for a brunch shoot. I actually teared up behind the mixer because I've been struggling with inconsistent lamination for months, and that batch finally had the honeycomb crumb right. My morning baker said "you look like you just saw a ghost" and I couldn't explain it. Has anyone else had a random rush that felt like a sign you finally fixed a recurring problem? Or was it just dumb luck with the calendar?
Man, that honeycomb crumb will mess with your head when it finally shows up right. I ran a bakery for years and the inconsistent lamination thing almost always comes down to two things: your butter block temp and how cold your dough is when it goes in. If the butter's too soft it smears into the dough instead of staying in layers, and you get that bready crumb instead of the pockets. Next time you nail a batch, write down the room temp, the butter temp, and how long you chilled between folds. A church group plus a wedding planner is a fluke, but the crumb you got? That was earned. Don't let anybody tell you it was just the calendar.
