That Saturday my sourdough loaves all came out perfect and I almost cried
Last weekend I woke up at 4am to feed my starter and everything just clicked. I usually get maybe 2 good loaves out of 4 but that day all 4 had perfect oven spring and ear. The kitchen temp was exactly 76 degrees which I think helped the bulk fermentation go smoothly. My scoring finally came out clean and deep instead of that ragged mess I usually get. Has anyone else had a random perfect day where your dough just behaves itself for no obvious reason?

Depends on how many expirations you've watched from the front row first. That's the real lottery nobody talks about, the patience game.
