Last month, my neighbor spent hours trying to prop up a wobbly table with folded paper instead of just tightening the screws. I see this all the time, where people will use a messy fix for years before trying the obvious right tool. Why do we treat the simple answer like it's too easy to work? It's like we're wired to doubt that fixing something can be that simple. Your flour scale story is just another version of that, where the better method is right there but we fight it. Maybe it's pride, or maybe we're just creatures of habit who hate to admit our way was wrong.

My sourdough starter finally took off when I stopped eyeballing the water.

Yeah that "stubborn refusal" hits home. I had a solid year of hockey puck cookies because I insisted my scoop method was fine. The relief when I finally bought a ten dollar scale and my dough stopped being a sticky mess was real. Why do we fight the simple fixes for so long?
