My grandma's sourdough starter advice finally clicked after 6 tries
My grandma always told me to feed my starter at the same time every day without skipping, but I figured close enough was fine. After 6 weeks of flat, dense loaves I finally set a timer and stuck to a strict 24 hour schedule. The difference was night and day - my last batch actually had that open crumb structure I've been chasing. For anyone else fighting with a stubborn starter, how strict are you with your feeding times?

Timer discipline is everything. Stuck to 7am like clockwork and my starter went from sad puddle to bubbly beast in a week.

Timer discipline is a game changer no doubt. I had the same problem for weeks until I forced myself to pick one time and stick with it no exceptions. Your starter just needs that routine to know when to wake up and get going. I'd also say make sure your water isn't too cold in the morning, room temp makes a big difference for that first feed. Once they lock into that schedule they really do turn around fast.
