My entire batch of sourdough starter went flat after a power outage in Phoenix

I was prepping for a big order and came back to find it completely dead, so I had to call a friend across town for a backup culture. Has anyone else had to rescue a bake after something like that?

That's why I keep a dried backup in my pantry.

Power outages are a baker's nightmare. I keep a jar of discard in the fridge as a safety net for exactly this reason. It has saved me more than once.

Safety net" is exactly right. I lost a whole batch of levain last winter during a storm. The fridge discard was the only thing that got me baking again once the lights came back on. It feels like a little bit of insurance sitting there. Smart move keeping yours ready to go.
