Last Wednesday was my best baking day in 8 years

I had this one day last week where everything just clicked. Three batches of sourdough came out with perfect oven spring, my croissants had that honeycomb crumb, and I even nailed a brioche I've been struggling with for months. Got 12 loaves done by 10 AM instead of my usual 2 PM finish. The funniest part was my oven temp was 15 degrees off the whole time, I just happened to adjust it right. What's your closest call where a mistake turned into a win?

oh man, that story reminds me of what happened to my buddy Dave last summer. he was making this huge batch of macarons for a friend's wedding, like 200 of them, and he realized halfway through that he'd dumped cinnamon in instead of the powdered sugar he meant to use. he was freaking out, thought he'd have to start over, but he just rolled with it and added a little extra vanilla to balance it out. turns out those cinnamon macarons were the biggest hit of the dessert table, people were asking him for the recipe for weeks. now he jokes that his "oops" recipe is his signature move, and he's still not sure how he messed up that measuring cup in the first place. it's crazy how sometimes the best stuff comes from total disasters.

Yeah I gotta admit I used to be one of those guys who thought if you messed up a recipe even a little bit you might as well toss it and start over. But seeing how your buddy Dave turned that cinnamon blunder into something people actually loved changed my mind @adamgreen. I mean yeah he freaked out at first which is totally fair but he just kept going and found a way to make it work. That's the thing about cooking or baking or whatever you just never know when a screwup is gonna be the thing that makes it better. Your buddy Dave is onto something with that "oops" recipe thing too because honestly those end up being the best stories. Now when I mess up in the kitchen I just roll with it and see what happens instead of panicking.
