I was totally wrong about using expired yeast for sourdough starter

About 4 months ago I tried feeding my starter with a packet of yeast that was 2 months past the best-by date. I figured it would be a total dud and I'd have to toss everything. To my surprise the starter actually took off faster than with fresh yeast, and the bread had this deeper tangy flavor. Has anyone else experimented with expired yeast or am I just getting lucky here?

Ha, that's hilarious. I once tried reviving a starter that had been sitting in the back of my fridge for so long it looked like a science experiment. I just scraped the fuzzy top off and fed it, and somehow it came back to life and made the best pancakes I've ever had. Did you notice any weird smells while it was going?

My grandmother kept a jar of starter in the fridge for ten years after she passed and my dad made bread with it last month.

@phoenix_thompson4 that fuzzy top trick worked for me once too. Dead yeast has more amino acids from breaking down so it actually feeds the sourdough bacteria better. Just watch for any funky mold colors - toss it if it's green or black.
