Baked 500 loaves in one week for a farmers market order and my mixer started smoking

Had to finish the last 50 loaves hand kneading at 3am because my Hobart literally gave out after 487 loaves anyone else push their gear past its limit doing high volume orders?

Yeah that Hobart was screaming for mercy way before it gave out. You really pushed it past its limit.

I was reading a piece in a food service magazine not long ago about the Hobart H600 model and they mentioned the motor is only rated for about 80 percent of its advertised load over a long shift. So if you were running it at full capacity for hours on end, that noise was a warning you should have heeded. @nancyw97 is right in saying it gave you signs before it finally quit. I think the issue is you were just trying to get through the rush and didn't want to slow down. But equipment like that is a tool, not a workhorse you can abuse all day.
