Almost ruined a wedding cake because of cheap mixing bowls

I was at a bakery in Portland last month helping with a 3 tier wedding cake. One of my cheap metal bowls slipped right off the counter while I was creaming butter and sugar, splattered all over the floor. We had to scramble to find enough backup ingredients and work double time to meet the delivery window. That day I finally threw out all my flimsy bowls and got proper heavy duty ones with rubber bottoms. Has anyone else had a close call like that during a big order?

Those rubber bottoms are a lifesaver. I had a similar disaster with a cheap bowl that slid right off the counter during a cookie order last year. Never going back after that upgrade.

Read a blog post from a pastry chef in Chicago who said she lost a whole batch of macarons because her bowl slid off and hit the mixer paddle. Made me think twice about my own setup.

Ugh that's the worst feeling ever watching a batch go down like that. I've had a bowl slip on me before and it's just instant regret.
