Warning: My neighbor's comment about my chicken wings was a game changer
I always used to spray my wings with oil before air frying, but my neighbor Mike said that just makes them steam and get soggy. I tried his method of patting them super dry with paper towels first, and after 20 minutes at 400 degrees, they were the crispiest I've ever made. Do you guys have any other simple prep tricks that make a huge difference?

Wait, have I been steaming my wings this whole time? I feel like I just found out I've been tying my shoes wrong for thirty years. My method was basically just spray and pray. For real though, "spray and pray" should be the official name for how I cook half the stuff in my kitchen. I once tried to bake cookies and forgot the sugar, so I'm not exactly winning any culinary awards over here. But the paper towel tip is a game changer, I tried it last night and my wings actually looked like they belonged on a menu instead of a crime scene. Now I just gotta figure out why my "hot" sauce is always just sad ketchup with cayenne.

Spray and pray" is sending me. You were just blasting them with oil straight from the can? That explains the sad wings, man. That stuff goes on way too thick and pools up. You gotta pat them dry first, the paper towel thing isn't just a trick, it's the whole game. Wet skin will never get crispy, it just steams in its own grease.
