Rant: I bought a $40 silicone basket insert thinking it was a game changer

It just blocks the airflow and makes everything soggy, so my fries came out limp. What's a better way to cook smaller stuff without it falling through the grate?

Those silicone things are a total trap, I fell for one a few years back. You need something with holes, not a solid wall. Try a perforated pizza pan or a grill basket made of metal. They let the hot air move around the food so it actually gets crispy instead of steaming. I ruined a batch of onion rings the same way before I figured it out. The metal ones are cheap and they last forever.

Oh man, @bettyfox, you just described my sad, soggy french fry disaster from last week! That silicone tray turned my crispy potatoes into a steamy mess, like they took a hot bath. I'm definitely hunting for a metal basket now before I waste more good food.

My old pizza pan with the holes works perfect for fries. Got it at a yard sale for like two bucks.
