My air fryer saved dinner after my oven broke on a Tuesday night.

I was trying to roast a whole chicken when the heating element in my oven just stopped working. I cut the chicken into pieces, tossed them with some oil and spices, and cooked them in the air fryer for about 25 minutes. What's your best recipe for cooking a whole meal in the air fryer when you're in a pinch?

Cutting the chicken into pieces was smart, it cooks way faster that way. I do a whole meal by putting seasoned chicken thighs on one side of the basket and tossing some broccoli florets and potato chunks on the other. The fat from the chicken drips down and makes the veggies taste amazing. You just have to shake the basket halfway through so everything gets crispy.

That chicken fat trick @dakotae48 mentioned is a total game changer, but adding a lemon wedge to the basket with the veggies really brightens the whole dish up.

My lemon wedge just made the broccoli taste weirdly bitter last time.
