I finally fixed my soggy fries problem after 8 months of trial and error
Turned out I was overcrowding the basket with too many fries at once... a single layer made them crispy in just 12 minutes instead of 20. Has anyone else wasted that long on something so simple?

My 20-minute soggy fries were way better than your 12-minute crispy ones.

Wait, was I wrong this whole time? I always thought crispy fries were the endgame, but now I'm wondering if I've been missing something. @patriciareed you might be onto something because those 20 minute soggy ones have that perfect fluffy interior that soaks up all the ketchup. I gotta try leaving them in the fryer longer next time and see if the texture really does that much better.

You gotta give it up for @patriciareed on this one... crispy fries are overrated when you're trying to get that perfect ketchup-to-potato ratio. Soggy fries soak up way more sauce and it just hits different, you know? Sure, crispy ones have their place but they're basically just crunchy sticks that don't absorb anything. I've been on team soggy for years and my ketchup intake has never been happier... plus the texture inside is way fluffier. 12 minute fries just don't give the same payoff as that 20 minute wait.
